Carrot Cake

 Back from yet another hiatus. I shouldn't do this too often. However, I have something pretty exciting to share this week. Evidently, I baked a carrot cake.


It's moist, not too sweet, and full of walnuts. I got the recipe from Joy Of Baking - Carrot Cake, as I have for my previous few attempts at the oven. A decent recipe, truly, though it will be a good idea to use half the sugar as in the recipe. I added half a jar of apple sauce, as recommended, and it turned out very well! With the recipe, I made two small cakes, the size as shown below (12cm diameter), and a huge loaf. It didn't cost much, probably just over $20. It isn't about the money though, not that I'm making a business here. It's the awesome taste and texture that matters after all.


I'll probably be baking a cranberry orange bread this coming weekend or the next. Another long weekend ahead due to labour day! Hopefully I'll walk around in town for some photos to share here.
